RUUSVUU's Killer Grilled Cheese
This is a crispy, golden to dark brown sandwich slathered in grilled butter and filled with your favorite cheese.
Ingredients
2-4 slices of cheese or a generous helping of shredded cheese
2-4 tablespoons of butter, as desired
Instructions
Begin by heating a small skillet over medium-high heat. Add a tablespoon or two of butter and allow it to melt completely, coating the bottom of the pan. Lay your first slice of hearty bread into the buttered skillet. Choose your cheese—any variety works beautifully, whether it’s sharp cheddar, Swiss, provolone, or a blend—and add as much as you like. Feel free to change up the cheese selection each time for different flavor profiles.
Place the second slice of bread on top and add another generous tablespoon or two of butter directly on the upper slice. As the sandwich begins to cook, the cheese will slowly soften while the bottom slice of bread turns crisp and develops a rich golden-brown color. Once the first side is toasted and the bread has a satisfying crunch, flip the sandwich carefully but quickly. This allows the butter to melt onto the skillet and creates that perfect crust on the second side.
Continue grilling until the second side reaches the same level of golden-to-dark brown crispness and the cheese is fully melted and gooey. Adjust the heat as needed—slower cooking results in a melty interior, while the butter ensures the bread stays beautifully toasted.
Serve immediately and enjoy a hot, crunchy, buttery grilled cheese sandwich. It’s simple, nostalgic, and always a crowd-pleaser. You can easily repeat this for others who want a taste.
I like to serve my grilled cheese alongside a steaming bowl of thick tomato soup and garnish it with fresh basil. The combination is classic and comforting.
Chef's Tips
- Use good bread. Sourdough, artisan sandwich bread, or thick-cut white bread gives a stronger crust and better texture.
- Shred your cheese. Pre-shredded cheese doesn’t melt as smoothly because of anti-caking agents. Freshly grated melts faster and creamier.
- Keep the heat steady. Medium heat is ideal—too high and the bread burns before the cheese melts.
- Press lightly with a spatula. Gentle pressure helps the cheese melt evenly without crushing the sandwich.
- Don’t skimp on butter. Butter = flavor + crispiness. But you can also use mayo for an ultra-even golden crust.
- Mix cheeses. Combining a melty cheese (like mozzarella) with a flavorful cheese (like sharp cheddar or gruyère) gives the best of both worlds.
- Experiment with add-ins: tomato slices, caramelized onions, ham, bacon, pesto, or a sprinkle of garlic powder can elevate a simple grilled cheese to gourmet.
- Rest the sandwich for 1–2 minutes. The bread stays crisp while the cheese finishes setting inside.
- Slice diagonally. Not just for aesthetics—this also makes it easier to dip into soup.
- Soup pairing is king. Tomato basil is classic, but roasted red pepper or creamy potato soups are also amazing companions.
